| The Winemaking | After waiting for full ripeness on the selected Semillon and Sauvignon blanc blocks, the grapes where harvested towards the end of February. Fermentation in 500L French oak barrels (50% new) was followed by 10 months of lees maturation before blending and bottling in December of 2007 |
